Pop Up! They’ve been around in the cities and major centres for more than a decade.

Sally Griffith has taken advantage of the pop up idea and brought her coffee van to Hawks Nest for the holiday period.

With space and power available through the vacant store on the corner of Tuloa and Booner Street, Sally rented the space through an on-line events site.

“We are actually from the Central Coast, so we come up here every day and it’s been very beneficial,” Sally told News Of The Area.

Sally added with a smile, “We’ve been saving lives, saving marriages, saving children.”

“We started the day after Boxing Day and we’re here to the 20th January.”

Dad, Max Mahony, helps out with the heavy work, and is very proud of his resourceful daughter.

“For a one-man band, she’s doing very well.”

“Every person we’ve met, from locals to other retailers and holidaymakers, they’ve all been very positive,” Max said.

Sally started her business from scratch 18 months ago, buying the van and fitting it out.

But she’s no stranger to hospitality having worked in the trade for 20 years.

The ‘Pop Up’ experiment in Hawks Nest has proved so successful, Sally and her ‘Good Morning Sunshine’ Coffee Van will be back with their caffeine hit for the locals and tourists through the Easter Holidays.
