Locals Eliza Punton and Jeremy Scheerlinck have opened the first new business in the retail trading precinct in many years.

Eliza, who grew up in Newcastle met Jeremy on the Gold Coast and the couple brought their family to Anna Bay for the lifestyle.

Their new restaurant Rubi Blue is a leap of faith in the Anna Bay community, for the couple who already run Infusion Cafe at Anna Bay.

Jeremy Scheerlinck told News Of The Area, “It is keeping us pretty busy and it will be a challenge to maintain Infusion Cafe through the day and cater to a higher end market at Rubi Blue through the day and night.”

He believes that Eliza’s experience as a trained chef and her love of Mediterranean food will see new options on the menu for Anna Bay locals.

The team from Rubi Blue and Infusion Cafe have also been helped out at the Anna Bay Tavern during a period where the tavern had no on site restaurant.

“Eliza will has created an exciting new menu at Rubi Blue, alongside traditional favourites of fish and chips and schnitzels the menu boasts Swan Bay Oysters, local seafood and locally sourced fruit and vegetables.

“We are also choosing to support other small businesses in the supply chain, like Anna Bay Microgreens, working together to build a better environment for business in Anna Bay.”

He believes that the continued support of locals teamed with Eliza’s passion for food will see the business grow to employ even more locals.

“We currently employ five locals in the two businesses and we are looking to focus on quality food and value for money at a restaurant that offers full table service,” he said.

Rubi Blue is located in the shopping precinct adjacent to the Anna Bay Tavern.
